【Ban-yan】Jiang Liao Duan-mei
Jiang Liao Duan-mei, 1916~, Chion-lin, Hsin-chu County. She was married at the age of 18; and at her early 20s (around the end of WWII), for increasing income to support her family, she started running a small store selling ‘hsien-ban-yan tang’ (rice balls with slight salty flavor soup). Due to her delicate handiwork and delicious taste of the soup, along with the appetizing and savory seasoning, the business was a great success, and earned her enough income for the family. Among the customers of the present time, some from the old time are often seen, yho had stated to eat in her stall since young. The locals intimately ca; jer ‘Soster Ban-yan, and whenever they think of Sister Ban-yan’s ban yan, the childhood memory and the good old time seem to come back to them dearly.
【Rice Noodles & Fried Shallots】Chen Chi-chong and Chang Jing-sen
Chen Chi-chong, 1925~ and Chang Jing-sen, 1932~, husband & wife, Hsin-pu, Hsin-chu County. Based on the hereditary principles of ‘count every penny when doing business, but be generous when treating friends’, the couple sells rice noodles (ban-tiao) in Hsin-pu Street, while the husband taking charge of rice noodles and the wife delicious fried shallots that is the most essential seasoning in the delicacy. They insist both quality and quantity in their cooking procedure. For 35 years, their rice noodles have been an important delicacy in the Hakka communities. When those who are away from Hsin-pu return home, it’s such a necessity to go to Chen’s store and enjoy the warm and delicious rice noodles of their hometown.
【Pig’s Feet Delicacy】Lin Hai-hong
Lin Hai-hong, Wan-rang, Pin-tong County, 1907 ~ 1967. He worked as a cook after the restoration of Taiwan, and later set up his own noodle stall around a street corner. At that time, the side dish, pig’s feet, surprisingly attracted the dinners greatly. Therefore, he opened Hai-hong Restaurant and the main course was pig’s feet. Eventually, pig’s feet of Hai-hong became a symbolic delicacy of Wan-rang. In January, 1981, the late president Jiang Jing-guo went on an inspection tour to South Taiwan and dined in Hai-hong Restaurant before returning to Taipei. The news was widely broadcasted by the media, and the restaurant immediately became famous. Lin has passed away for more than 30 years now, and the restaurant keeps prosperous under his grand children’s management.
【Persimmon Cake】Liu Huo-yu
Liu Huo-yu, Hsin-pu, Hsin-chu County, 1923 ~ 2001. From September to November, the dry wind season, the four-generation family of the Lius starts to get busy drying up fresh persimmons into persimmon cake. Liu Hou-yu, the 2nd generation of the family, was an expert of the trade. He was diligent and traditional, and was generous passing he skills to other people. His persimmon cakes were among the best in the area. Due to all the favorable causes, Liu Hsin-wu, the 4th generation, has developed the local business into a large tourist persimmon cake stores, named ‘Jin Han’, and it is famous for its quality and taste.
