Wen Kuang Rou
1. Materials: 1.2kg of streaky pork, a little of garlic and cayenne pepper, 100g of Mei Gan Cai
2. Seasoning: A little of rice wine, 6 spoons of soy sauce, 1 spoon of sugar, a little of water
(1)Cut pork into pieces four fingers wide. Put pork in boiling water and wait until water boils. Turn flame to low and cook for 40 minutes. Cut pork into pieces 1cm thick.
(2)Add oil in heated wok. Stir-fry garlic and cayenne pepper. Add seasoning. Put pork in boiling water and wait until water boils. Turn flame to low and cook for 10 minutes. Keep broth handy.
(3)Clean and chop up Mei Gan Cai. Add some broth and mix evenly.
(4)Arrange pork pieces in bowl and sprinkle broth. Add Mei Gan Cai. Place them in a steamer and steam for one hour.
